How baking chocolate is made

Cocoa nibs

Below the nibs you can see some balances of the removed shells.



Dried cocoa beans, received from the farmer, are cleaned, roasted and the outer shells of the beans are removed.

The beans with the shells removed are called 'nibs' ( see image above).
Nibs contain about 50% cocoa butter (fat of the cocoa beans).

The nibs are then fine grounded and cocoa butter is released.
The fine grounded nibs and cocoa butter together is called chocolate liquor.

Baking chocolate is cooled down chocolate liquor.
Baking chocolate is bitter and unsweetened. It is used in baking products.
